Step-by-Step Instructions for Healthy Baked Feta Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly and cut them in halves or quarters. In a large baking dish, combine the potatoes, halved cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and salt. Mix everything well to coat evenly.
  3. Place a block of feta cheese in the center of the baking dish and drizzle more olive oil over it.
  4. Slide the baking dish into the oven and bake for 35–40 minutes, stirring halfway through.
  5. Once baked, stir the feta into the dish and garnish with fresh herbs if desired.
