For the Casserole
  • 4 pieces Chicken Thighs can substitute chicken breasts
  • 1 medium Onion any variety of onion
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger freshly grated
  • 2 medium Carrots chopped
  • 1 medium Courgette (Zucchini) chopped
For the Sauce
  • 1 cup Orange Juice can substitute lemon
  • 1 tablespoon Honey can substitute agave syrup
  • 1 cup Chicken Stock gluten-free option available
For the Spice Mix
  • 1 teaspoon Paprika
  • 1 teaspoon Coriander
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon
For Cooking
  • 1 spray Olive Oil Cooking Spray or use olive oil
For Garnishing
  • 1 bunch Fresh Coriander or substitute with chives or parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (fan 160°C/350°F). Gather your ingredients.
  2. In an oven-proof casserole dish, spray with olive oil and place over medium-high heat. Add chicken thighs, chopped onion, minced garlic, and grated ginger. Sauté for 6-8 minutes until lightly browned.
  3. Stir in paprika, coriander, cumin, chili powder, turmeric, and cinnamon. Toss for about 2 minutes.
  4. Add chopped carrots, orange juice, honey, and chicken stock. Stir well and transfer the casserole to the oven, baking for approximately 1 hour.
  5. After 40 minutes, stir in chopped courgette (zucchini) and return to the oven for an additional 20 minutes.
  6. Remove from oven, taste for seasoning, and add salt and pepper as needed. Garnish with fresh coriander before serving.
