- Preheat your oven to 180°C (fan 160°C/350°F). Gather your ingredients.
- In an oven-proof casserole dish, spray with olive oil and place over medium-high heat. Add chicken thighs, chopped onion, minced garlic, and grated ginger. Sauté for 6-8 minutes until lightly browned.
- Stir in paprika, coriander, cumin, chili powder, turmeric, and cinnamon. Toss for about 2 minutes.
- Add chopped carrots, orange juice, honey, and chicken stock. Stir well and transfer the casserole to the oven, baking for approximately 1 hour.
- After 40 minutes, stir in chopped courgette (zucchini) and return to the oven for an additional 20 minutes.
- Remove from oven, taste for seasoning, and add salt and pepper as needed. Garnish with fresh coriander before serving.
