  • 2.25 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 3 cups all-purpose flour
  • 0.5 cups yellow cornmeal
  • 1 teaspoon salt
  • 0.33 cups unsalted butter melted and cooled
  • 2 tablespoons olive oil for greasing
For the Sauce
  • 2 cloves garlic minced
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt to taste
  • 1 teaspoon sugar optional for balance
For the Toppings
  • 2 cups low-moisture mozzarella
  • 0.5 cups grated Parmesan
  • 1 cup Italian sausage cooked and crumbled

Method
 

Preparation Steps
  1. In a mixing bowl, combine warm water, active dry yeast, and granulated sugar. Let sit for 5 minutes until foamy.
  2. Add all-purpose flour, yellow cornmeal, salt, melted butter, and olive oil. Knead for 6-8 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover with a towel, and let rise for 60-90 minutes until nearly doubled in size.
  4. Heat olive oil in a saucepan, sauté minced garlic until fragrant. Stir in crushed tomatoes, tomato paste, sugar, oregano, basil, and salt. Simmer for 15 minutes.
  5. Preheat oven to 425°F. Grease a 14-inch deep dish pizza pan with butter and olive oil.
  6. Once risen, punch down the dough, roll it into a circle, and transfer into the greased pan, pressing up the sides.
  7. Layer 2 cups of mozzarella at the bottom, add cooked toppings, spoon the sauce over, and top with Parmesan.
  8. Bake for 25-35 minutes until crust is golden and cheese is bubbling.
  9. Let rest for 10-15 minutes before slicing.
