Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, sift together the flour, cocoa powder, baking powder, and salt.
  2. In a separate large bowl, whisk together the eggs and sugar until well combined, then stir in the milk, vegetable oil, and vanilla.
  3. Pour the wet mixture into the bowl of dry ingredients, stirring gently until just combined. Let the batter rest for 5 minutes.
  4. Gently fold in the chocolate chips into your rested batter.
  5. Prepare the chocolate ganache by heating the heavy cream and pouring it over the chocolate; let it sit, then stir until smooth.
  6. Preheat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter for each pancake.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Stack the pancakes and drizzle with warm ganache. Serve with fresh berries or ice cream.
