Method
 

Preparing the Cake
  1. Preheat your oven to 350°F (175°C). Combine flour, cocoa, baking powder, baking soda, and salt in a bowl.
  2. In another bowl, whisk eggs, sugar, oil, coffee, and vanilla until smooth. Mix dry ingredients into wet until combined.
  3. Pour batter into greased 9-inch cake pans and bake for 30-35 minutes, checking with a toothpick.
Making the Vanilla Mascarpone Filling
  1. Beat mascarpone and heavy cream until thick and creamy, about 2-3 minutes. Gradually add powdered sugar and vanilla, mixing until fluffy.
Preparing the Cherries
  1. Toss cherries with a splash of vanilla and let sit for about 10 minutes to enhance flavor.
Assembling the Cake
  1. Once cake layers are cool, place one layer on a plate, add mascarpone filling, and scatter cherries on top. Repeat with the second layer.
Topping the Cake
  1. For the ganache, heat cream over low, pour over chocolate, and stir until smooth. Pour over cake or dust with cocoa.
