Step-by-Step Instructions
  1. Begin by setting your Instant Pot to sauté mode over medium heat. Pour in olive oil, allowing it to heat until shimmering. Add onion and garlic to the pot and sauté for 2-3 minutes, stirring occasionally, until the onion turns translucent.
  2. Add bite-sized pieces of chicken breast to the pot. Season with salt and pepper and cook for an additional 2-3 minutes, until lightly browned on all sides.
  3. Stir in the rinsed rice and make sure it's well coated. Pour in the chicken broth and add the frozen mixed vegetables, mixing thoroughly.
  4. Secure the lid on your Instant Pot and cook on high pressure for 8 minutes. Set the table while it cooks.
  5. Once cooking time is up, allow pressure to naturally release for 5 minutes, then perform a quick release.
  6. Stir in the heavy cream and shredded cheddar cheese until melted and creamy. Season with additional salt and pepper to taste.
