- Heat about 1 cup of vegetable oil in a medium saucepan over medium heat. Add thinly sliced shallots and fry for 15-20 minutes until golden brown. Drain and season with Creole Cajun seasoning.
- Bring water to a boil in a large pot and add the trimmed green beans. Blanch for 3 minutes, then transfer to an ice bath to halt cooking.
- Melt 4 tablespoons of butter in a skillet over medium heat. Sauté mushrooms and garlic until tender, about 5-7 minutes. Whisk in flour, then gradually add chicken broth and lemon juice and seasonings. Simmer until thickened, about 5 minutes.
- Stir in 1 cup of heavy cream and half of the parmesan cheese. Fold in the green beans. Transfer into a greased casserole dish.
- Preheat oven to 375°F (190°C) and bake the casserole uncovered for 20 minutes. Sprinkle remaining parmesan and crispy shallots on top, then bake for an additional 7-10 minutes until bubbling and golden.
- Allow to cool slightly before serving, garnishing with extra crispy shallots if desired.
