Step-by-Step Instructions for Grilled Veggie Wraps
  1. In a mixing bowl, combine sliced bell peppers, onions, diced zucchini, mushrooms, and celery. Drizzle with olive oil, and sprinkle salt and garlic powder. Toss until well coated.
  2. Preheat your air fryer to 390°F. Place the coated vegetables into the fryer basket and roast for about 12 minutes, shaking halfway through.
  3. With one minute left, add a handful of spinach to the roasted veggies, mixing gently before removing.
  4. Prepare your panini grill. Take a tortilla, place a scoop of roasted veggie mixture in the center, fold sides inward, and roll tightly.
  5. Brush the wraps with butter or olive oil and grill for 2-3 minutes until golden brown and crispy.
