Step-by-Step Instructions
  1. In a small bowl, combine the ricotta cheese with salt, black pepper, and optional seasonings. Stir until creamy.
  2. Spread ricotta mixture on one side of one bread slice. Layer with spinach and sun-dried tomatoes. Top with mozzarella or provolone, then place another slice of bread on top.
  3. In a skillet, melt butter or heat olive oil over medium heat. Toast assembled sandwich for 4-5 minutes until golden brown.
  4. Flip the sandwich and cook the other side for another 4-5 minutes, pressing lightly.
  5. Remove from skillet, let cool for a minute, slice in half, and serve warm.
