- In a small bowl, combine the ricotta cheese with salt, black pepper, and optional seasonings. Stir until creamy.
- Spread ricotta mixture on one side of one bread slice. Layer with spinach and sun-dried tomatoes. Top with mozzarella or provolone, then place another slice of bread on top.
- In a skillet, melt butter or heat olive oil over medium heat. Toast assembled sandwich for 4-5 minutes until golden brown.
- Flip the sandwich and cook the other side for another 4-5 minutes, pressing lightly.
- Remove from skillet, let cool for a minute, slice in half, and serve warm.
