Preparation
- Preheat your oven to 170ºC (340ºF) and prepare three 8-inch round cake pans by greasing and lining them.
- Sift together all-purpose flour, cornstarch, granulated sugar, dark brown sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the vegetable oil, sour cream, eggs, black coffee, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Divide the batter evenly among the prepared cake pans and bake for 28-30 minutes.
- After baking, let the cakes cool on a wire rack for about 5 minutes before transferring to cool completely.
- While cooling, mix coffee with espresso powder and whip butter until light and fluffy.
- Add powdered sugar and coffee mixture to the butter, whipping until smooth and fluffy.
- Level the cooled cake layers and assemble by spreading frosting between layers and on top.
- Use remaining frosting to cover the cake for a polished look.
