Ingredients

  • 3 bags Earl Grey Tea or 3 tablespoons loose leaf
  • 1 cup All-Purpose Flour measured properly
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Granulated White Sugar
  • 1/2 cup Unsalted Butter softened
  • 1 piece Egg at room temperature
  • 1 teaspoon Vanilla Bean Paste or vanilla extract
  • 1 tablespoon Culinary Lavender dried
For the Frosting
  • 8 ounces Cream Cheese softened
  • 2 cups Powdered Sugar
  • a few drops Purple Food Coloring optional

Method
 

Preparation
  1. Prepare Lavender Sugar: Pulse dried culinary lavender in a food processor until fine, then mix with granulated sugar, setting aside a tablespoon for frosting.
  2. Preheat Oven: Heat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, and ground Earl Grey tea.
  4. Cream Butter & Sugar: Combine softened butter with lavender sugar, mixing until light and fluffy.
  5. Add Egg & Vanilla: Beat in the egg and vanilla bean paste until the mixture is pale and fluffy.
  6. Combine: Gradually add the dry ingredients to the wet mixture until just incorporated.
  7. Form Cookies: Scoop dough into balls and roll in reserved lavender sugar, then place on baking sheets.
  8. Bake: Bake for 9-10 minutes until edges are golden brown. Allow them to cool on the sheets for a few minutes.
  9. Make Frosting: Blend softened cream cheese and unsalted butter until fluffy, then mix in powdered sugar and vanilla paste until smooth.
  10. Frost Cookies: Once cooled, top each cookie with lavender cream cheese frosting.
