  • 1/4 cup Olive Oil
For Flavoring
  • 1 cup Parmesan Cheese, grated Can substitute with Pecorino Romano or mozzarella
  • 1 tablespoon Thyme, fresh Can use 1 teaspoon of dried thyme
  • 1/4 cup Pine Nuts, optional Omit for a nut-free version
  • 2 cloves Garlic, minced
  • 1 tablespoon Additional olive oil for drizzling

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking pan with olive oil.
  2. Combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper in a large mixing bowl.
  3. In a separate bowl, whisk the eggs, milk, and olive oil until smooth.
  4. Pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Fold in the zucchini, garlic, Parmesan cheese, thyme, and pine nuts (if using).
  6. Pour the batter into the prepared baking pan and drizzle with additional olive oil.
