Preparation
  1. In a medium bowl, whisk together gochujang, soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and rice vinegar until smooth.
  2. Cut the chicken thighs into 1-inch pieces and add to the marinade. Toss to coat, cover, and refrigerate for at least 30 minutes.
  3. Heat a skillet over medium-high heat for 1-2 minutes, add marinated chicken, and cook for 3-4 minutes on each side until caramelized.
  4. Remove chicken from the skillet and set aside. In serving bowls, add warm cooked rice as the base and top with chicken.
  5. Top with cucumber, shredded carrots, and cooked edamame for added freshness.
  6. Garnish with kimchi, sesame seeds, and green onions. Serve immediately.
