  • 1 cup Raw Cashews soaked for 30 minutes
  • 1/4 cup Honey or alternative sweetener
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Lemon Zest avoid the pith
  • 1/2 cup Shredded Coconut optional
  • 1 scoop Protein Powder unflavored or vanilla
  • 2 tablespoons Poppy Seeds optional
  • as needed cup Non-Dairy Milk for consistency

Method
 

Preparation Steps
  1. Soak 1 cup of raw cashews in water for about 30 minutes, then drain well.
  2. In a food processor, combine the soaked cashews, 1/4 cup of honey, the juice of 1 lemon, and the zest from the same lemon. Add optional ingredients as desired.
  3. Blend the mixture until it forms a mostly smooth and slightly sticky dough, around 1-2 minutes.
  4. If using, add 2 tablespoons of poppy seeds and pulse gently to distribute.
  5. Scoop out the mixture and form into 1-inch balls. Optionally roll in shredded coconut.
  6. Chill the balls in the refrigerator for about 30 minutes to firm up.
