  • 1 tablespoon Baking Powder check freshness
  • 50 grams Cold Butter unsalted, cubed
  • 150 grams Cheddar Cheese grated, or other cheeses
  • 100 milliliters Cold Milk full-fat preferred
  • 50 milliliters Cold Water
  • 1 teaspoon Dijon Mustard optional

Method
 

Step-by-Step Instructions for Light and Fluffy Cheese Scones
  1. Preheat the oven to 200˚C (fan) or 220˚C / 392˚F (convection).
  2. Line a baking tray with baking parchment.
  3. In a large mixing bowl, combine the plain flour and baking powder.
  4. Cut cold, cubed butter into the flour mixture until it resembles coarse breadcrumbs.
  5. Stir in the grated cheddar cheese.
  6. In a separate bowl, mix together cold milk, cold water, and Dijon mustard. Pour into the flour mixture and stir gently.
  7. Turn the dough onto a floured surface, knead gently, and roll to a thickness of 3 cm (1.2 inches).
  8. Cut out rounds from the dough using a round cutter and place on the prepared tray.
  9. Sprinkle extra grated cheese on top if desired.
  10. Bake for 12-15 minutes or until golden brown on top.
  11. Allow to cool on a wire rack for a few minutes before serving.
