Step-by-Step Instructions
  1. Begin by lightly toasting your chosen bread slices in a toaster or on a skillet over medium heat for about 3-5 minutes.
  2. In a small bowl, mash a ripe avocado until smooth yet slightly chunky. Add lemon juice, salt, and pepper.
  3. Spread the mashed avocado mixture on one side of each slice of toasted bread.
  4. Layer thin cucumber slices on top of the avocado spread.
  5. Add fresh leafy greens on top of the cucumber, then sprinkle thinly sliced red onion.
  6. Optionally, include halved cherry tomatoes and sprinkle fresh herbs.
