Method
 

Step-by-Step Instructions
  1. Peel the mango using a vegetable peeler, slice around the pit, discard the pit, and dice the mango.
  2. Peel the cucumber, cut off both ends, slice in half lengthwise, scoop out seeds, and dice.
  3. Rinse the blueberries under cool running water and drain thoroughly.
  4. Cut the avocado in half, remove the pit, scoop the flesh, and dice into small pieces.
  5. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper.
  6. Pour the dressing over the salad ingredients in the large bowl and toss gently.
  7. Chop fresh cilantro, sprinkle over the salad, and toss again.
  8. Serve immediately or cover and refrigerate for up to an hour.
