Ingredients
  

For the Macaron Shells
  • 2 large Egg Whites at room temperature
  • 150 g Granulated Sugar
  • 250 g Almond Flour
  • 200 g Powdered Sugar
  • 1 drop Food Coloring orange for sunset effect
For the Mango Jam
  • 2 cups Chopped Mangos fresh or frozen
  • 100 g Granulated Sugar for jam
  • 2 tablespoons Lemon Juice fresh
  • 1 tablespoon Cornstarch to thicken
For the Buttercream Filling
  • 100 g Unsalted Butter at room temperature
  • 200 g Powdered Sugar for buttercream
  • 1 cup Mango Jam

Method
 

Preparation
  1. Gather all ingredients, preheat oven to 300°F (150°C), and prepare baking sheets lined with parchment.
  2. Sift almond flour and powdered sugar together in a bowl.
  3. In a heatproof bowl, whisk egg whites and granulated sugar over a double boiler until frothy, then whip until stiff peaks form.
  4. Fold the sifted mixture into the whipped egg whites until the batter is smooth and glossy (30-50 folds).
  5. Pipe circles onto the baking sheets and let sit for 20-40 minutes until a dry skin forms.
  6. Bake the macarons for approximately 18 minutes, rotating halfway through.
  7. Make the mango jam by simmering chopped mangos, sugar, and lemon juice; thicken with cornstarch.
  8. Cream butter, gradually add powdered sugar, then mix in mango jam until smooth.
  9. Assemble macarons by pairing shells, piping buttercream and adding jam between them.
  10. Airbrush completed macarons with orange food coloring if desired before serving.

Notes

Store filled macarons in an airtight container in the fridge for up to 4 days. Freeze unfilled shells for up to 2 months.
