- In a medium saucepan, bring about 3 cups of water to a gentle boil over medium heat. Add sago pearls and cook for approx. 15 minutes until transparent. Remove from heat and let sit for 15 minutes.

- Rinse cooked sago pearls under cold running water to remove excess starch. Soak in cold water for 5 minutes before draining.

- In a blender, blend peeled and diced mangos with evaporated milk until smooth.

- In a large mixing bowl, combine drained sago, diced mango, coconut milk, and condensed milk. Gently fold in mango puree.

- Taste and adjust sweetness. Cover and refrigerate for at least 1 hour.

- Serve in cups or bowls, optionally garnished with diced mango or mint leaves.
