Sago Base
  • 1 cup sago pearls small tapioca pearls
Mango Puree
  • 2 ripe mangos peeled and diced
  • ½ cup evaporated milk chilled
Sweetness and Richness
  • 1 cup coconut milk full-fat preferred
  • ½ cup condensed milk adjusted to taste
Optional Toppings
  • additional toppings consider coconut or mango jelly

Method
 

Cooking Instructions
  1. In a medium saucepan, bring about 3 cups of water to a gentle boil over medium heat. Add sago pearls and cook for approx. 15 minutes until transparent. Remove from heat and let sit for 15 minutes.

  2. Rinse cooked sago pearls under cold running water to remove excess starch. Soak in cold water for 5 minutes before draining.

  3. In a blender, blend peeled and diced mangos with evaporated milk until smooth.

  4. In a large mixing bowl, combine drained sago, diced mango, coconut milk, and condensed milk. Gently fold in mango puree.

  5. Taste and adjust sweetness. Cover and refrigerate for at least 1 hour.
