Ingredients

For the Chicken
  • 1 pound Chicken Thighs Juicy and flavorful; opt for thighs as they stay tender throughout cooking.
For the Sweet Potatoes
  • 2 cups Sweet Potatoes These add natural sweetness and caramelize beautifully when roasted. Consider butternut squash as a substitute if desired.
For the Glaze
  • 1/4 cup Maple Syrup Provides sweetness and a sticky texture to the dish; honey works in a pinch!
  • 2 tablespoons Dijon Mustard Essential for a tangy depth in the glaze; ensure you choose a gluten-free version if necessary.
For Roasting
  • 2 tablespoons Olive Oil Used for roasting to achieve that crispy texture; feel free to swap with vegetable oil or melted butter.
  • 2 cloves Garlic Adds a rich flavor; substitute with 1/2 tsp garlic powder if fresh isn't available.
  • 1 teaspoon Salt Simple seasoning that enhances all flavors beautifully.
  • 1 teaspoon Pepper Simple seasoning that enhances all flavors beautifully.

  • baking tray
  • Mixing bowl
  • Parchment paper

Method

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Gather your baking tray and parchment paper for easier cleanup.
  2. Pat the chicken thighs dry with paper towels. In a small bowl, mix maple syrup and Dijon mustard until blended. Coat each chicken thigh with the marinade.
  3. Place the marinated chicken thighs skin-side up on the prepared baking tray with enough space between them.
  4. Peel and chop sweet potatoes into uniform chunks. Drizzle with olive oil, sprinkle with salt and pepper, and toss until evenly coated. Add to the tray with the chicken.
  5. Bake for 25-30 minutes, flipping the chicken and basting halfway through cooking.
  6. Check that the chicken has reached an internal temperature of 165°F (74°C). If not done, return to the oven.
  7. Remove from the oven and let rest for a few minutes. Serve warm, optionally adding fresh greens.

Notes

Basting midway enhances flavor. Ensure enough space on the tray to avoid steaming rather than caramelizing. Use a meat thermometer to guarantee doneness.
