- Preheat your oven to 425°F (220°C). Gather your baking tray and parchment paper for easier cleanup.
- Pat the chicken thighs dry with paper towels. In a small bowl, mix maple syrup and Dijon mustard until blended. Coat each chicken thigh with the marinade.
- Place the marinated chicken thighs skin-side up on the prepared baking tray with enough space between them.
- Peel and chop sweet potatoes into uniform chunks. Drizzle with olive oil, sprinkle with salt and pepper, and toss until evenly coated. Add to the tray with the chicken.
- Bake for 25-30 minutes, flipping the chicken and basting halfway through cooking.
- Check that the chicken has reached an internal temperature of 165°F (74°C). If not done, return to the oven.
- Remove from the oven and let rest for a few minutes. Serve warm, optionally adding fresh greens.
