- Bring a large pot of salted water to a boil. Add cheese tortellini and cook according to package instructions (3-5 minutes). Drain tortellini and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring gently. Allow to simmer for about 2-3 minutes until slightly thickened.
- Add sun-dried tomatoes and spinach to the sauce and cook for an additional 2-3 minutes until the spinach wilts.
- Gently add the drained tortellini to the skillet, tossing to coat in the sauce for about 1 minute.
- Sprinkle in grated Parmesan cheese and season with salt and black pepper. Stir and cook for another minute.
- Plate the Marry Me Tortellini, garnishing with additional Parmesan and fresh basil if desired.
