  • 1 pound Chicken Breasts can substitute with boneless skinless chicken thighs
  • 2 cups Zucchini can use yellow squash instead
  • 1 cup Red Bell Pepper can swap with green pepper
  • 1 cup Yellow Bell Pepper can swap with green pepper
  • 1 medium Red Onion can substitute with yellow onion
  • 1 cup Cherry Tomatoes halved Roma tomatoes work well as a substitute
  • 1/2 cup Kalamata Olives try green olives if preferred
For Seasoning and Garnish
  • 3 cloves Garlic can use garlic powder
  • 1 teaspoon Dried Oregano fresh herbs offer a brighter taste
  • 1 teaspoon Dried Basil fresh herbs offer a brighter taste
  • 1 teaspoon Paprika adjust seasoning to preference
  • 1 teaspoon Salt adjust seasoning to preference
  • 1/2 teaspoon Black Pepper adjust seasoning to preference
  • 1/2 cup Feta Cheese omit for a dairy-free version
  • 1/4 cup Fresh Parsley can use dill or cilantro
  • 2 pieces Lemon Wedges for serving

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Cut the chicken breasts into bite-sized chunks and slice the zucchini, bell peppers, and red onion uniformly. Halve the cherry tomatoes.
  3. In a large mixing bowl, combine the chicken chunks with the sliced zucchini, bell peppers, red onion, cherry tomatoes, and Kalamata olives. Add minced garlic, olive oil, dried oregano, basil, paprika, salt, and black pepper. Toss until evenly coated.
  4. Spread the mixture evenly on a large, rimmed baking sheet lined with parchment paper.
  5. Place the baking sheet in the preheated oven and roast for 25-30 minutes.
  6. Remove from the oven, let cool briefly, then sprinkle with feta cheese and parsley. Serve with lemon wedges.
