- Cut the chicken breasts into bite-sized chunks and slice the zucchini, bell peppers, and red onion uniformly. Halve the cherry tomatoes.
- In a large mixing bowl, combine the chicken chunks with the sliced zucchini, bell peppers, red onion, cherry tomatoes, and Kalamata olives. Add minced garlic, olive oil, dried oregano, basil, paprika, salt, and black pepper. Toss until evenly coated.
- Spread the mixture evenly on a large, rimmed baking sheet lined with parchment paper.
- Place the baking sheet in the preheated oven and roast for 25-30 minutes.
- Remove from the oven, let cool briefly, then sprinkle with feta cheese and parsley. Serve with lemon wedges.
