Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté 1 chopped onion and 3 minced garlic cloves for 3-4 minutes until translucent and fragrant.
  2. Add 1 pound of ground beef and cook, breaking it apart with a spatula, until browned, roughly 5-7 minutes. Stir in 2 cups of tomato sauce, seasoning with salt and pepper to taste, and let it simmer on low for 20 minutes.
  3. While the meat sauce simmers, prepare the cheese filling by combining 1 cup of ricotta cheese, 1 cup of finely shredded mozzarella, and ½ cup of grated Parmesan cheese in a large mixing bowl. Season with salt and pepper to taste.
  4. Stuff the manicotti shells with the cheese mixture using a piping bag or small spoon.
  5. Preheat your oven to 375°F (190°C). Spread a thin layer of meat sauce in a baking dish, arrange the stuffed manicotti shells, then pour the remaining meat sauce on top and sprinkle extra mozzarella.
