  • 0.5 cup crumbled feta or cotija cheese Vegan cheese for dairy-free option.
  • 0.33 cup chopped fresh cilantro Omit if cilantro isn't preferred.
For the Dressing
  • 1 teaspoon chili powder or smoked paprika Adjust for desired heat.
  • 2 tablespoons juice of lime
  • 1 tablespoon olive oil Avocado oil can be used.
  • salt and pepper To taste.
Optional for Extra Heat
  • 1 small diced jalapeño
  • 0.25 teaspoon cayenne

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, reduce to simmer, cover, and cook for 15 minutes.
  2. Sauté or grill corn until golden and slightly charred, about 5-7 minutes. Allow to cool.
  3. Chop red onion and cilantro, setting aside.
  4. In a large bowl, combine cooled quinoa, corn, onion, cilantro, and cheese.
  5. In a small bowl, whisk lime juice, olive oil, chili powder, salt, and pepper.
  6. Toss the dressing with the salad. Chill for 30 minutes before serving.
