Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine 3 cups of mixed berries with 1 tablespoon of lemon juice, 1 teaspoon of lemon zest, 2 tablespoons of maple syrup, and 2 tablespoons of cornstarch. Toss until coated.
  3. Roll out the puff pastry to about ¼ inch thick and cut into 4 equal rectangles. Transfer to the prepared baking sheet.
  4. Spoon the berry filling into the center of each pastry rectangle, leaving a border around the edges.
  5. Fold the edges over the berry filling to form a pocket and brush with beaten egg.
  6. Bake for 20-25 minutes until golden brown and puffed up.
  7. Remove from oven, let cool slightly, and serve warm, optional with ice cream or whipped cream.
