  • 2 cups All-Purpose Flour or a gluten-free flour blend
  • 1 teaspoon Salt optional for low-sodium diets
  • 2 teaspoons Baking Powder ensure freshness for best rise
  • 1 cup Pecans coarsely chopped, can substitute with walnuts or almonds
For the Glaze
  • 1/2 cup Powdered Sugar a sugar-free alternative can work too
  • 2 tablespoons Milk any milk or substitute for glaze

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it lightly.
  2. Chop the fresh peaches and coarsely chop the pecans, setting them aside.
  3. Whisk together the granulated sugar, milk, canola oil, and eggs until smooth.
  4. Gradually add the flour, baking powder, and salt to the wet mixture; mix gently.
  5. Fold in the chopped peaches and pecans until evenly distributed.
  6. Pour the batter into the greased loaf pan, filling it about three-quarters full.
  7. Bake for 50-60 minutes until golden brown and a knife inserted comes out clean.
  8. Cool in the pan for 20 minutes, then transfer to a wire rack.
  9. In a small bowl, whisk together the powdered sugar and milk to form a glaze.
  10. Once cooled, drizzle the glaze over the loaf and serve.
