Method
 

Preparation
  1. In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, and salt and pepper to taste. Coat the sirloin steak with the marinade and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, and salt and pepper in a bowl. Stir well and refrigerate.
  3. Whisk together olive oil, lemon juice, honey, minced garlic, oregano, and salt and pepper in a small bowl to make the vinaigrette.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side. Let it rest for 5 minutes before slicing.
  5. Assemble the bowl with cooked grains, sliced steak, cherry tomatoes, cucumber, red onion, olives, and feta. Top with tzatziki and vinaigrette.
  6. Garnish with fresh herbs and serve with warm pita bread.
