- Preheat your oven to 350°F (175°C) and prepare three round cake pans by greasing them or lining with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the eggs, then add the milk and vanilla, mixing until smooth. Gradually pour this into the dry ingredients, stirring gently.
- Divide the batter into three bowls: mix melted chocolate into the first, add pureed strawberries to the second, and leave the third as vanilla.
- Pour each flavored batter into the prepared pans and bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
- Assemble by placing the chocolate layer on a platter, adding frosting, then layering the strawberry and vanilla cakes with more frosting in between.
- Frost the top and sides of the cake, then slice and serve with whipped cream and mint if desired.
