Step-by-Step Instructions
  1. In a food processor, combine 1 cup of pitted green olives, 1 cup of crumbled feta cheese, and 8 ounces of softened cream cheese. Add 1/4 cup of extra virgin olive oil, 2 minced garlic cloves, the zest and juice of one lemon. Pulse for about 30 seconds until the mixture is smooth yet slightly textured. Scrape down the sides to ensure even blending.
  2. Incorporate 1/2 cup of chopped roasted red peppers, 1 teaspoon of dried oregano, and a pinch of chili flakes. Pulse 2-3 times to fold in the ingredients, ensuring chunkiness in the dip. Taste and adjust seasoning with freshly ground black pepper.
  3. Transfer the dip into a serving dish, smoothing the top with a spatula. Garnish with whole green olives and drizzle a little extra virgin olive oil over the top.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld beautifully.
  5. When ready to serve, remove from refrigerator and give a quick stir if needed. Pair with crispy pita chips, fresh vegetable sticks, or toasted crostini.
