Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F) for convection or 180°C (355°F) for standard ovens. Grease and line a 20 cm (8-inch) circular cake tin with parchment paper.
  2. In a large mixing bowl, whisk together 1 cup of milk and 1 tablespoon of vinegar. Let sit for 5 minutes, then add ½ cup of canola oil, 2 large eggs, 1 cup of brown sugar, and ½ cup of caster sugar, whisking until smooth.
  3. Sift in 1 ½ cups of plain flour, ½ cup of cocoa powder, 1 teaspoon of baking powder, and ½ teaspoon of salt. Stir gently until just combined. Do not overmix.
  4. Gradually add 1 cup of boiling coffee or water, mixing until well combined and thin.
  5. Pour batter into prepared cake tin and bake for 55-60 minutes. Avoid opening the oven for the first 45 minutes.
  6. Let the cake cool in the tin for about 20 minutes before transferring to a wire rack to cool completely.
