Cooking Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
- Add 1 pound of diced boneless, skinless chicken breasts. Season with salt, pepper, and 1 teaspoon of smoked paprika. Sear for 5-6 minutes until golden brown, then remove from skillet.
- Pour in 2 cups of water or chicken broth, scraping up caramelized bits. Bring to a gentle simmer.
- Stir in 8 ounces of uncooked penne pasta, cover, and simmer for 10-12 minutes until al dente.
- Add 1 cup of BBQ sauce, 2 tablespoons of honey, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of garlic powder. Stir well to combine.
- Return the seared chicken to the skillet, toss with the pasta mixture, and simmer for an additional 2-3 minutes.
- Serve hot and garnish with optional freshly chopped parsley or green onions.
