- Heat a large cast-iron skillet over medium-high heat for 2-3 minutes until smoking slightly.
- Pat steaks dry using paper towels and generously season both sides with salt and pepper.
- Add 1 tablespoon of olive oil to the hot skillet, swirling to coat the pan evenly. Place steaks in the skillet without crowding.
- Sear the steaks for 3-4 minutes without flipping. For medium, cook an additional 4-5 minutes, or 5-6 minutes for well-done.
- Remove steaks from the skillet and let them rest for at least 5 minutes, tented with foil.
- Prepare garlic herb butter in a bowl by mixing 1 stick of softened butter, 1 tablespoon garlic, 2 tablespoons minced herbs, and a pinch of salt and pepper.
- After resting, serve steaks and top generously with garlic herb butter to melt.
