  • 1 lb Ground Turkey can substitute with ground chicken or lentils
  • 1 can Black Beans drained and rinsed
For the Topping
  • 1 cup Cheese cheddar, mozzarella, or dairy-free
  • 1 medium Avocado sliced or diced
  • 1/2 cup Sour Cream or Greek yogurt
  • 2 stalks Green Onions sliced

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes; place them on a baking sheet and bake for 45-60 minutes until fork-tender.
  2. While the sweet potatoes bake, heat a skillet over medium heat with olive oil. Add the ground turkey, seasoning it with spices, and sauté for 6-8 minutes until cooked through.
  3. Mix black beans into the cooked turkey and heat through for 2-3 minutes.
  4. Slice the baked sweet potatoes in half lengthwise and fluff the insides. Fill each half with the turkey and black bean mixture.
  5. Sprinkle cheese over the filled sweet potatoes and return to the oven for 5-10 minutes until melted.
  6. Remove from oven, let them cool slightly, and top with avocado, sour cream, and green onions before serving.
