  • cup Red Onion Chopped; can replace with sweet onion.
  • cup Black Olives Sliced.
  • cup Green Olives Sliced; can use only one type of olive if preferred.
  • 4 oz Feta Cheese Crumble over the top; can replace with vegan feta.

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Dressing: In a mixing bowl, combine olive oil, lemon juice, vinegar, mustard, minced garlic, oregano, salt, and pepper. Whisk until emulsified.
  3. Combine the Vegetables: Add halved tomatoes, quartered cucumbers, diced bell pepper, chopped red onion, and sliced olives to the dressing. Toss gently.
  4. Mix in the Pasta and Feta: Add cooled pasta to the bowl. Crumble feta over the top and toss everything together until well combined.
