- In a medium saucepan, combine 12 halved and pitted cherries, 1/2 cup of water, and 1/2 cup of granulated sugar. Place over medium heat, stirring to dissolve sugar completely. This should take about 3-5 minutes.
- Increase the heat slightly and let the mixture simmer for 10-15 minutes. Mash the cherries gently to allow their flavor to infuse fully into the syrup.
- Carefully strain the mixture through a fine mesh sieve into a bowl or measuring cup, extracting as much syrup as possible.
- In tall glasses, pour a few tablespoons of the cherry syrup, then top off with soda water and stir gently to combine.
- Fill each glass with ice, pour in your fizzy Cherry Vanilla Soda, and garnish with a fresh cherry or a sprig of mint.
