Step-by-Step Instructions
  1. In a medium saucepan, combine 12 halved and pitted cherries, 1/2 cup of water, and 1/2 cup of granulated sugar. Place over medium heat, stirring to dissolve sugar completely. This should take about 3-5 minutes.
  2. Increase the heat slightly and let the mixture simmer for 10-15 minutes. Mash the cherries gently to allow their flavor to infuse fully into the syrup.
  3. Carefully strain the mixture through a fine mesh sieve into a bowl or measuring cup, extracting as much syrup as possible.
  4. In tall glasses, pour a few tablespoons of the cherry syrup, then top off with soda water and stir gently to combine.
  5. Fill each glass with ice, pour in your fizzy Cherry Vanilla Soda, and garnish with a fresh cherry or a sprig of mint.
