For the Syrup
  • 1 cup Water Adjust based on desired syrup concentration
  • 1 cup Granulated Sweetener Can be substituted with erythritol or stevia
  • 1 tbl Lemon Juice Freshly squeezed recommended
  • 1 cup Fresh or Frozen Blueberries Depends on what's in season
For the Drink
  • 2 cups Club Soda Not tonic water
  • 1/2 cup Half & Half Can swap with coconut cream for dairy-free
  • 1 cup Whipped Cream Optional

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine water, granulated sweetener, and freshly squeezed lemon juice. Stir over medium heat until the sweetener dissolves, about 2–3 minutes.
  2. Add fresh or frozen blueberries to the saucepan and reduce heat to low-medium. Simmer for about 15 minutes, stirring frequently.
  3. Gently mash the blueberries with a fork or potato masher. Increase heat to medium and simmer for an additional 8–10 minutes until slightly thickened.
  4. Remove from heat and strain the mixture through a fine mesh strainer into a bowl or container. Let it cool before refrigerating.
  5. Chill the syrup in the refrigerator for 1–2 hours.
  6. Fill a tall glass halfway with ice cubes, pour in club soda until three-quarters full.
  7. Drizzle in the chilled blueberry syrup over the club soda.
  8. Add a splash of half & half and swirl gently to mix. Top with whipped cream if desired.
