  1. Begin by selecting a ripe watermelon, dice it into manageable chunks and place in a large mixing bowl.
  2. In a high-powered blender, combine the prepared watermelon, coconut milk, and optional ingredients. Blend until smooth.
  3. Pour the mixture into a shallow baking dish, cover with plastic wrap, and freeze for 4–6 hours until solid.
  4. After freezing, let it sit for 5 minutes, cut into cubes, then blend again for a creamy texture.
  5. Transfer back to the baking dish, cover, and freeze for another 2–3 hours to firm up completely.
  6. Serve by scooping into chilled bowls and optionally garnishing with fresh mint or coconut whipped cream.
