Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and chop zucchini and squash into bite-sized pieces. Halve or quarter the tomatoes.
  3. Mince the garlic and sprinkle over the chopped vegetables.
  4. Combine the vegetables with olive oil, salt, and pepper in a large bowl. Toss to coat.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Roast in the oven for 20-25 minutes, stirring halfway through.
  7. During the last 5 minutes, sprinkle parmesan over the vegetables.
  8. Remove from oven and serve warm.
