  • 12 oz Refrigerated Tortellini Any flavor
  • 8 oz Mozzarella Fresh mozzarella recommended
  • 1 cup Mini Pepperoni Optional for vegetarian option
  • 1/2 cup Sliced Black Olives Green olives can be swapped
  • 1 pint Cherry Tomatoes Halved
  • 1 jar Jarred Roasted Red Peppers Reserve oil
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Basil For garnish
For the Dressing
  • 1/4 cup Roasted Red Pepper Oil Reserved from the jar
  • 1/4 cup Olive Oil High-quality recommended
  • 2 tbsp Balsamic Vinegar Adjust to taste
  • 1 tbsp Red Wine Vinegar Can be swapped for more balsamic
  • 1/2 cup Parmesan Cheese Grated

Method
 

Preparation Steps
  1. Cook the tortellini in salted boiling water for 3-5 minutes until tender, then drain and cool.
  2. In a mixing bowl, combine mini pepperoni, olives, diced mozzarella, cherry tomatoes, and roasted red peppers.
  3. Fold in the cooled tortellini gently to combine without breaking them.
  4. Whisk together roasted red pepper oil, olive oil, balsamic vinegar, red wine vinegar, and Parmesan in a small bowl.
  5. Pour the dressing over the salad, tossing gently to coat. Season with salt and pepper to taste.
  6. Chill the salad in an airtight container for at least 60 minutes for better flavor melding.
  7. Serve with fresh basil leaves for garnish once ready to enjoy.
