Step-by-Step Instructions
  1. Start by dicing the yellow onion and mincing the garlic. Gather all your ingredients and measure them out.
  2. In a large mixing bowl, combine the ground beef, egg, breadcrumbs, salt, pepper, dried onion, and Dijon mustard. Mix gently until just combined, then form into four equal patties.
  3. Heat olive oil and unsalted butter in a large skillet over medium-high heat. Sear each patty for about 5 minutes until golden brown.
  4. Remove patties and lower the heat. Add the diced onion and minced garlic, season with salt and pepper, and sauté until the onion is translucent, about 3 minutes.
  5. Deglaze the pan with dry white wine, scraping up any bits stuck to the bottom, and let simmer for about 2 minutes.
  6. Add heavy cream to the skillet and bring to a gentle boil. Stir in grated Parmesan and horseradish, adjusting according to taste.
  7. Return the patties to the skillet, spoon sauce over them, and let simmer for another 5 minutes.
  8. Remove from heat, garnish with chives, and serve immediately.
