  • 2 tbsp Olive Oil or low-calorie cooking spray
  • 8 pieces Thick Sausages substitute with turkey or chicken for a leaner option
  • 2 pieces Chorizo Sausages skip for vegetarian option
  • 2 Red Onions roughly chopped
  • 3 cloves Garlic minced
For Seasoning
  • 1 tsp Salt adjust to taste
  • 1 tsp Mixed Herbs
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Granules optional
  • 1 tsp Mustard Powder
  • 1 tbsp Brown Sugar or Sukrin Gold Sweetener use any sugar you prefer
  • 2 tbsp Red Wine Vinegar or substitute with red wine
For the Veggies and Beans
  • 2 Red Peppers sliced
  • 800 g Chopped Tomatoes
  • 800 g Cannellini Beans drained and rinsed
  • 250 ml Hot Chicken or Vegetable Stock add more if needed
  • 1 tbsp Chopped Parsley for garnish
For Finishing Touches
  • Salt and Pepper to taste

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large casserole dish over medium-high heat for 2-3 minutes until hot.
  2. Brown the thick sausages for 8-10 minutes, turning occasionally, then set aside.
  3. Cook the chorizo sausages for 3-4 minutes until crispy, using the residual oil in the pan.
  4. Add the red onions and garlic, then sprinkle in the seasoning and sauté for 5 minutes.
  5. Deglaze with red wine vinegar and let simmer for about a minute.
  6. Add the sliced red peppers and cook for 3-4 minutes until tender.
  7. Stir in the tomatoes, cannellini beans, and stock, mixing thoroughly.
  8. Return the sausages to the mixture, cover partially, and simmer for 30-40 minutes.
  9. Adjust seasoning before serving hot, garnished with parsley.
