Method
 

Preparation
  1. In a medium mixing bowl, whisk together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, and season with salt and pepper to taste.
  2. Add chicken thighs to the bowl, ensuring each piece is fully coated in the marinade. Cover and let marinate for at least 15 minutes.
  3. Preheat your cooking surface over medium-high heat for about 5 minutes.
  4. Carefully place marinated chicken thighs on the skillet or grill. Cook for 6–7 minutes on each side, or until golden-brown and cooked through.
  5. Transfer the chicken to a cutting board and let it rest for about 5 minutes, then chop into bite-sized pieces.
  6. Warm corn tortillas until pliable, about 30 seconds on each side.
  7. Assemble tacos by filling warmed tortillas with chopped chicken, diced onions, and cilantro. Squeeze lime over the top.
