- In a medium mixing bowl, whisk together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, and season with salt and pepper to taste.
- Add chicken thighs to the bowl, ensuring each piece is fully coated in the marinade. Cover and let marinate for at least 15 minutes.
- Preheat your cooking surface over medium-high heat for about 5 minutes.
- Carefully place marinated chicken thighs on the skillet or grill. Cook for 6–7 minutes on each side, or until golden-brown and cooked through.
- Transfer the chicken to a cutting board and let it rest for about 5 minutes, then chop into bite-sized pieces.
- Warm corn tortillas until pliable, about 30 seconds on each side.
- Assemble tacos by filling warmed tortillas with chopped chicken, diced onions, and cilantro. Squeeze lime over the top.
