  1. In a blender, combine mayonnaise, minced garlic, chopped chipotle pepper, adobo sauce, smoked paprika, onion powder, cumin, honey, and a pinch of salt. Blend until smooth.
  2. Coat the chicken thighs with the chipotle marinade and refrigerate for about 10 minutes.
  3. Preheat your grill to medium-high heat, approximately 375°F, and brush with olive oil.
  4. Grill the marinated chicken thighs for 5-6 minutes on each side until golden brown and cooked through.
  5. During the last minute of grilling, place slices of pepper jack cheese on top of the chicken to melt.
