  2. Preheat oven to 400°F (200°C). Rinse the eggplant slices, pat dry, drizzle with olive oil, and roast for 20-25 minutes.
  3. Combine whole milk ricotta, minced garlic, and chopped fresh basil in a mixing bowl. Mix until smooth.
