Instructions
  1. Prepare the dry ingredients by whisking together flour, baking powder, and salt in a large mixing bowl.
  2. Mix the wet ingredients by combining milk, egg yolks, and melted butter in a separate bowl, then add to dry ingredients and stir gently.
  3. Add the cheddar and chives to the batter, folding them in gently.
  4. Prepare the egg whites by beating them until soft peaks form and fold into the batter.
  5. Cook the waffles in a preheated and greased waffle iron for about 4-5 minutes until golden brown.
  6. While the waffles cook, fry the bacon in a skillet until crispy, then drain on paper towels.
