Step‑by‑Step Instructions for Savory Chicken Bhuna
  1. Heat 2 tablespoons of vegetable oil over medium heat in a large pan. Once shimmering, add 2 minced garlic cloves, 1 chopped green chili, and 1 tablespoon of freshly grated ginger. Cook for 1 minute until fragrant.
  2. Add 2 diced onions to the pan, stirring well. Sauté for 3-4 minutes until golden brown.
  3. Once golden, stir in 1 teaspoon each of turmeric powder, chili powder, ground cumin, and ground coriander, along with 1 tablespoon of garam masala. Cook spices for 1 minute.
  4. Add 2 cups of chopped tomatoes and 1 cup of water. Bring to boil, then cover and reduce heat to low. Simmer for 10-15 minutes, stirring occasionally.
  5. Stir in 1 pound of diced chicken thighs. Cook for about 20 minutes, stirring occasionally, until chicken is tender and fully cooked through.
  6. Squeeze in juice of half a lemon, and fold in 2 tablespoons of chopped fresh coriander. Allow to rest for a few minutes before serving.
