  • 1 cup Frozen Corn Kernels Or fresh/canned
  • 1 can Low Sodium Black Beans Rinsed and drained

  • 2 cups Shredded Chicken Cooked
  • 1 cup Reduced Sodium Chicken Broth Or vegetable broth
  • 1 can Mild Green Chilies Diced
  • 2 tablespoons Olive Oil Or any neutral oil
  • 2 tablespoons Tomato Paste Can use crushed tomatoes
Topping
  • 1 cup Shredded Monterey Jack Cheese Can substitute with cheddar or pepper jack

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C).
  2. In a large baking dish, combine diced onion, red bell pepper, brown rice, fajita seasoning, and cayenne.
  3. In a separate bowl, whisk together chicken broth, green chilies, tomato paste, and olive oil.
  4. Pour the broth mixture over the rice and vegetable blend, and stir to combine.
  5. Add shredded chicken, black beans, and corn, mixing thoroughly.
  6. Cover the baking dish with aluminum foil and bake for 65-70 minutes.
  7. Remove foil and sprinkle cheese on top; bake uncovered for an additional 5-10 minutes.
  8. Let cool for 5-10 minutes before serving, and garnish as desired.
