- In a medium bowl, combine mayonnaise, minced garlic, adobo sauce, chopped chipotle pepper, smoked paprika, onion powder, cumin, honey, and kosher salt. Whisk until smooth.
- Coat the chicken thighs generously with the marinade. Let the chicken marinate for at least 10 minutes.
- Preheat your grill to medium-high heat, about 400°F and lightly oil the grates.
- Grill the marinated chicken thighs for 5–6 minutes per side, or until the internal temperature reaches 175°F.
- Cut the brioche buns in half and place them on the grill, cut-side down. Toast for 1-2 minutes until golden brown.
- Spread chipotle mayonnaise on each bun and layer with lettuce, tomato slices, grilled chicken, and pepper jack cheese.
