Method
 

Instructions
  1. In a medium bowl, combine mayonnaise, minced garlic, adobo sauce, chopped chipotle pepper, smoked paprika, onion powder, cumin, honey, and kosher salt. Whisk until smooth.
  2. Coat the chicken thighs generously with the marinade. Let the chicken marinate for at least 10 minutes.
  3. Preheat your grill to medium-high heat, about 400°F and lightly oil the grates.
  4. Grill the marinated chicken thighs for 5–6 minutes per side, or until the internal temperature reaches 175°F.
  5. Cut the brioche buns in half and place them on the grill, cut-side down. Toast for 1-2 minutes until golden brown.
  6. Spread chipotle mayonnaise on each bun and layer with lettuce, tomato slices, grilled chicken, and pepper jack cheese.
