  • 1 cup Coarsely Chopped Pepperoni Feel free to mix different types for variety
  • 1 cup Crushed Tomatoes Fresh tomatoes can be used, but watch the moisture levels
  • 2 tbsp Tomato Paste Optional but recommended for richness
For Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano
For the Wraps
  • 8 wraps Wraps Flour or whole grain wraps can be used
  • 1 cup Low-Fat Mozzarella Cheese Can swap with any preferred melting cheese

Method
 

Step-by-Step Instructions
  1. In a large skillet, sear 1 pound of lean ground beef over medium-high heat. Season with salt and pepper while breaking up the meat.
  2. Stir in 1 cup of coarsely chopped pepperoni along with 1 teaspoon each of onion powder, garlic powder, smoked paprika, and dried oregano.
  3. Pour in 1 cup of crushed tomatoes and 2 tablespoons of tomato paste into the meat mixture and allow it to simmer for 5-10 minutes.
  4. Lay out your wraps and spoon about 3-4 tablespoons of the cooled filling onto the center of each wrap, topping with ½ cup of low-fat mozzarella cheese.
  5. Position the assembled rolls seam-side down on a baking tray lined with parchment paper. Lightly spray with cooking oil and bake at 400°F for 8-10 minutes until crispy.
  6. Let the rolls cool for a few minutes before serving with marinara or ranch dipping sauce.
