Step-by-Step Instructions
  1. In a skillet over medium heat, cook 6 strips of bacon until crispy, about 8-10 minutes. Remove and let cool, then crumble.
  2. Shred 1 cup of cheddar cheese and roughly chop 1 cup of baby spinach. Crack 5 large eggs in a separate bowl.
  3. Preheat the oven to 400°F (200°C).
  4. Fit the pie crust into a pan, cover with parchment and weights, and bake for 10-12 minutes until slightly golden. Remove weights and bake an additional 5-7 minutes.
  5. Layer crumbled bacon, shredded cheddar, and chopped spinach in the pre-baked crust.
  6. Whisk together 5 eggs, 1 cup half and half, add salt and pepper. For optional richness, stir in hollandaise sauce.
  7. Pour custard into the crust, filling to 1/2 inch from the rim. Reduce oven to 375°F (190°C) and bake for 35-45 minutes.
